Skinny Chicken Tortilla Casserole has been one of my go-to meals here lately. It’s perfect for any season, cold or warm. It’s the perfect comfort food for winter or as a low carb meal in the summer.
This recipe is super quick and easy to make and there’s not a lot of clean-up afterward. It only requires a few ingredients, a big bowl, and a baking dish. Use a baking dish that can be placed in the refrigerator with leftovers and to save on dishes!
I promise that after you make Skinny Chicken Tortilla Casserole once you will add it to your rotating weekly menu. It’s delicious!
Basically, you throw all the ingredients in a huge bowl, mix them up, and place them in a 13×9″ baking dish then bake for about 40 minutes or so.
After the casserole has baked, toss some more cheese on top and bake a few minutes longer until the cheese is bubbly.
I told you it was super easy!
For a great side dish, try a small side salad full of delicious veggies.

Hi Michelle, I would do just a plain vegetable like string beans just steamed, broccoli, any green vegetable just either steamed or sauted very plainly because the casserole has already so much flavor. Looks real good. And thank you for stopping by at my blog A Sweeter Life, great to meet you.

Ooooh, this sounds delish! To go with? Oh I could see just having a simple salad as a compliment. Hmmm. Riced cauiflower mixed maybe with some corn would be good, too!
