Quick Chicken Fajitas

Quick Chicken Fajitas are great for busy weeknights when you don’t have time to cook a big meal. And they’re kid-approved!

I don’t know about you, but I love a quick and easy meal.

I also love a meal that my picky daughter will eat so I don’t have to fix her something separate.

If you need a quick meal made for a picky eater, then look no further than these quick chicken fajitas!

Not too long ago I was invited to a Pampered Chef party where a similar recipe was cooked and served. If there were no other people around I probably would have had seconds and maybe thirds.

They were that good!

And they made me purchase the Rockcrok Everyday Pan. I’m super glad I did because I use it quite often. (This is not an affiliate link nor is it a sponsored post.) The best thing about this pan is that you can put it in the microwave, the oven, the grill, and the refrigerator! If you have any leftovers, just pop them in the fridge without worrying about dirtying up another dish.

Let me show you how all this deliciousness is made.

*You do not need a Rockcrok Everyday Pan for this recipe. Any microwave-safe dish will work.

Quick Chicken Fajitas

For this recipe you will need:

3 medium bell peppers – green, yellow, and red
1 medium onion
2 garlic cloves
1 lb. boneless, skinless chicken breasts
2 tablespoons taco seasoning
1 lime
Flour tortillas
4 oz. mild (or sharp) cheddar cheese
Optional toppings: sour cream, salsa, guacamole

Here’s what you do:

  1. Slice the bell peppers and onions into strips.
  2. Using a garlic press, press the garlic on top of the vegetables. (Sometimes I substitute fresh garlic for garlic powder if I’m running behind.)
  3. Juice the lime into a medium bowl and add the taco seasoning; mix well. Add the chicken to the mixture and turn to coat. Place the seasoned chicken over the vegetables in the pan.
  4. Microwave, covered, on high for 12-15 minutes or until chicken temperature reaches 165 degrees and the juices run clear.
  5. Transfer the chicken to a cutting mat and slice it into thin strips. Return the chicken to the pan and combine it with the vegetables.
  6. Wrap the tortillas with a damp paper towel and microwave them on high for 30 seconds, or until warm. To serve, spoon the chicken and vegetable mixture onto the centers of the tortillas. Top with cheese and optional toppings.

Tip: Slice the vegetables beforehand and keep them in the refrigerator. You can also go ahead and coat your chicken in the lime juice and taco seasoning mixture and let it marinate in the refrigerator for a few hours.
