{Jump to Recipe}Eclair Cake is the perfect dessert to have after comfort food. It’s light and sweet and extremely hard to resist! The recipe only calls for a few ingredients and only takes a few minutes to make.
I have made this dessert for a lot of our family get-togethers, but it’s usually the one I end up taking to the family reunion. Our family reunion is in the summer and Eclair Cake is a nice cool and refreshing dessert on a hot day. People always flock toward the chocolate!
Since eclair cake is so quick and easy to make (and there’s no baking involved), it’s usually my go-to dessert for family functions. It does make a lot of servings, so keep that in mind. It will keep in the refrigerator for up to 5 days (although ours never lasts that long!).

First, you will line the bottom of a 9″x13″ glass baking dish with graham crackers.
I usually use my glass baking dish, however, it doesn’t have the best lid. For Christmas, I received a Rachel Ray baking dish (to match my other Rachel Ray cookware) and I love it! The lid is raised so it doesn’t smush the food in the pan. This is the one I have.
Mix a large box of French Vanilla Jello Pudding with 3 cups of milk as directed on the box. Add an 8-ounce tub of Cool Whip to the pudding mix and mix well.
Pour the pudding mixture over the graham crackers.
Add another layer of graham crackers.
Heat a can of chocolate frosting in the microwave for a few seconds until it is soft and easy to pour. Pour the heated icing over the top layer of graham crackers.
Chill for at least four hours, or overnight.
I love, love, love this dessert!!
